PESTO GOAT CHEESE BRUSCHETTA


· Vibrant Cilantro Pesto


· Cracked Pepper Chevre


· French bread baguette, thinly sliced



Preheat oven to 450°F. Lay out slices of baguette on a cookie sheet. Spread each with


thin layer of pesto. Top with a slice of goat cheese. Bake until the goat cheese starts to melt and the edges of the bread are crispy, usually 4-6 minutes.



CILANTRO-TOPPED ROASTED SALMON



· 4 salmon fillets (about 2 lbs. total)


· 4-6 Tbs. Vibrant Cilantro Pesto


· 2 tomatoes, cut in chunks



Preheat the oven to 400°F. Spray baking pan with oil and place the salmon pieces skin-side down. Spread Cilantro Pesto on the salmon, cover with the chopped tomatoes and season with salt and pepper. Bake uncovered for 15-18 minutes.



ROASTED PESTO POTATOES


Preheat oven to 400ºF. In a large bowl, toss together the 1-1/2 lbs. red potatoes (cut into 1” chunks) and 3/4 cup Bear Pond Farm Premium Basil or Onion-Garlic Pesto. Spread potatoes on a baking sheet. Bake, checking often, until crispy and golden.
